Arrival of Winter Storm Jonas
The winter storm Jonas arrived at our house on January 14-15. The snowfall here was about 6 inches, not as much as other parts of Kentucky.
Good day for baking some veggie pizza!
One of my favorite cookbooks is "Jane Fonda Cooking for Healthy Living" (1996 edition). There are lots of recipes that are healthy and delicious. Here is my version of a favorite pizza recipe.
The pizza dough recipe I use:
l tsp honey
l cup lukewarm water
2 tsp active dry yeast
2 tablespoons olive oil
1 tsp salt
l l/2 cups organic whole wheat flour
l l/2 cups organic white flour
(You can make this ahead of time and even freeze up to 2 months.)
Combine honey and water in a large glass bowl. Add the yeast and let it stand 5 minutes. Add oil, salt and flours and stir until it forms a ball. Knead about 5 minutes on a lightly floured surface. Put back in bowl, cover, and let rise for about an hour or till double in size. Return to the floured board and punch down and roll it out to fit onto a 12-inch round pizza pan. (I place it in the refrigerator till I'm ready to put on the topping).
Topping for the Pizza:
Preparation Time is about 25 minutes and serves 4
l onion, chopped
1 garlic clove, peeled and minced (you could also use 2 cloves)
8 ounces of ground beef (I used about l/2 pound of organic lean)
1 Tablespoon of herbs (I used lots of fresh herbs from our garden:
thyme, rosemary, oregano)you could also add
marjoram, basil, fennel seed and mint.
